We often hear about how people should decrease their sodium intake for heart health but we don’t often hear about how in conjunction with that, we should also increase our potassium intake. Muscles contract with the help of sodium and potassium, generally speaking most people get more than enough sodium but are often short on potassium. Tomatoes are a great source of potassium and by getting enough every day you can help keep your blood pressure normal and your heart healthy.
Ingredients
4 small cans whole crushed tomatoes OR 2 28oz cans whole crushed tomatoes
2 cups tomato juice
2 cups chicken brother
12-14 fresh basil leaves
1 cup coconut milk
1/2 cup butter
salt and cracked black pepper to taste
Directions
- Combine tomatoes, juice and brother in a stockpot, simmer 30 minutes
- Add basil leaves
- In small batches blend in food processor/blender OR with an immersion blender blend in pot.
- Return to pot
- Add coconut milk and butter while stirring over low heat
