- 1 C chopped red onion
- 2 garlic cloves, minced
- 1 C chopped spinach (or kale greens) packed
- 1 egg
- 1 T flax meal
- 1 T ground coriander
- 1 t ground ginger
- 1/2 t salt
- 450 g pkg ground turkey or chicken
- 1 C cooked sweet potato
- 1/4 C chopped walnuts (toasted optional)
Mix all ingredients together and make into patties OR you can use 1 T extra virgin olive oil to a frying pan and cook up the onion and garlic for 3 mins and then add the spinach or kale and cook till it wilts (about 2 mins), cool slightly and then add to the burger mixture. Grill with cooking spray and bbq burgers with the lid closed until cooked through, about 4-6 mins pr side. Serve with greek yogurt mixed with 1 T curry powder and top off with slices of avocado.
I eat these burgers on top of a bed of lettuce, sprouts and 1 T sunflower or pumpkin seeds (no bun).
